Sourdough Starter Care Guide
Getting Started
Just picked up your starter from the market? If you're not baking today, place it in the fridge as soon as you get home. If you plan to feed it within 24 hours, it’s fine to leave it at room temperature for now.
How To Feed & Store
To keep your starter alive and happy, feed it once a week:
- Take It out the fridge
- Discard Half
- Feed with 30g flour + 30g water
- Stir, let it sit at room temp for 2–4 hours, then return to the fridge
If you’re baking soon, feed it every 12–24 hours at room temperature until it’s bubbly and doubles in size — that’s when it’s ready to bake.
Tips & FAQ
- Why discard? It keeps your starter balanced and prevents overgrowth.
- How much should I keep? 60–100g is plenty — easier to feed, less waste.
- What’s that liquid? It’s called hooch. Just pour it off and feed your starter like normal.
- Long-term care: Weekly feedings keep your starter healthy, even if you only bake once a month.
